As we firmly cement ourselves into the mid autumn season, with the gloomy weather showing, I was looking for a comforting dish using in season vegetables.
Presented with Cavolo Nero as part of a weekly seasonable veg box I get I new instantly what I wanted to make - Tuscan Sausage Pasta (also the only recipie I actually know what to use Cavolo Nero for)
This recipie is one of my favourites; simple and comforting yet packed with flavour, complimented by it's balanced profile with hints of acidity and fennel flavour
Changes? added in a couple of cloves of finely sliced garlic with the shallots
How did it go ?
Although not being my first time making this, it was a simple enough recipie to follow. I know Italians love being picky with their cuisine - they tell you that you can't put onions and garlic in the same dish but I will always add garlic until someone proves me otherwise this is a bad idea. (Sorry Italy)
The key to Italian food is simple recipes using fresh and good quality ingredients, so I went all the way with premium Waitrose wild garlic sausages and De Cecco pasta (the best brand).
On reflection, I think it's best to stick to plain pork sausages rather than flavoured ones. With all the flavour already being added, it's unnecessary to add more. The flavoured sausages also tend to include ingredients which burn easily at the bottom of the pan and make it harder to get a nice browning to the sausage meat.
I think apart from the extra sausage flavours slightly burning and adding a bit of bitterness, my attempt was success!
Overall, a fantastic dish and good attempt. The recipe was simple and easy to follow, but equally nothing groundbreaking and not technically from an authentic Italian source.

This song came to me in a Spotify daylist titled "Barbeque Happy Hour Friday night".
I had no idea what kind of music to expect from this, but it did not disappoint. This song was a standout, the perfect mix between psychedelic synths and acoustic instruments. It lends to both jazz and disco with a distinct groove that will have you dancing around the kitchen non stop.
